What makes a recipe a favourite is for me :
1.Ease of cooking
2.Everyone likes it
I have Black Bean soup recipe fits all of the above criteria. I make it with cornbread currant scones . The soup is ready in about 20 minutes to make, is easy. cheap and DELICIOUS.
BLACK BEAN SOUP
10 sundried tomatoes (not packed in oil)
1 Cup boiling water
1 1/2 Cups chopped onion.
3 cloves garlic, minced
1/4 tsp cayenne ( opt)
2 Tbs. vegetable oil
1 tsp cumin
1/3 Cup water
1 28 cans diced tomatoes
2 16 oz cans Black Beans
1/4 Cup chopped fresh cilantro (opt)
Sour cream or plan yogurt for garnish (opt).
1. Pour the boiling water in a cup with sun dried tomatoes and set aside.
2.In pot saute garlic. onions and cayenne in oil for about 5 mins- stir often. Add cumin 1/3 cup water and add tomatoes. Cover and bring to a boil. Lower heat and simmer 5 mins.
3.Add Black Beans with liquid and let simmer. Stir occasionally.
4. Drain and chop up sun dried tomatoes ( I use kitchen scissors) . Add to soup and simmer for another 5-10 mins.
5. Stir is cilantro. Put half the soup in blender or use hand blender ( I use Braun hand blender) and puree about half the soup or until it consistency you like.
I serve this with cornbread scones. This is a great soup that hearty enough for dinner.
